☕ No-Bake Coffee Cheesecake
A rich and creamy coffee cheesecake that melts in your mouth.
Perfect for making beautiful desserts in flower molds.

???? Ingredients
• 150 g Greek yogurt
• 150 g cream cheese (Philadelphia style)
• 100 ml heavy cream
• 60 g powder sugar (amount may vary)
• 1 stick instant coffee (about 3 g)
• 2 tablespoons boiling water
• 11 g gelatin
• 50 ml water (for blooming the gelatin)
• Lotus Biscoff cookies (or any cookies you like)
☕ Prepare the Coffee
Dissolve 1 stick of instant coffee in 2 tablespoons of boiling water.
Stir well until completely dissolved.

1️⃣ Mix the base
In a mixing bowl combine:
• Greek yogurt
• cream cheese
• heavy cream
Mix everything together on low speed until smooth and creamy.

2️⃣ Add the coffee
Pour the prepared coffee into the mixture and mix until fully combined.

3️⃣ Prepare the gelatin
• Add 11 g gelatin to 50 ml water.
• Let it bloom for a few minutes.
• Gently melt it (in the microwave or over a water bath).

4️⃣ Combine
Pour the melted gelatin into the cheesecake mixture and mix well.

5️⃣ Fill the mold
Pour the mixture into your mold.
You can also add pieces of Lotus Biscoff cookies inside the cheesecake for extra flavor and texture.

6️⃣ Freeze
Place the mold in the freezer overnight until fully set.

7️⃣ Thaw
Transfer the cheesecake from the freezer to the refrigerator and let it thaw for several hours until soft and creamy.
